Fat – Isn’t all fat bad for me?

We’ve lived under a very “fat free” mindset over the past several years.  However, fat is essential to health, since it is the primary component of every cell, the brain, glands, organs, and even the hormones.  Without the “good fats” found in nuts, seeds, cold-water fish, and cold-pressed oils health will deteriorate.  “Bad fats”—hydrogenated vegetable oils, trans-fats, shortening, margarine, etc. – are created from processing fats and oils, done to extend product shelf-life.  This develops free radicals, damaging and changing the healthful, natural oils into toxic fats, destroying the health benefits and actually causing damage within the body.  The key is to eliminate the “bad fats” and add in the “good fats.”  Because our desserts are made from unprocessed nuts, you can deliciously add in these “good fats,” essential to health.

Nuts – How can you recommend nuts considering all of their fat and calories?

Nuts have numerous, research-proven health benefits:
Did you know…In 2004, the FDA approved the first qualified health claim to be printed on walnuts, showing the relationship of nut intake with the reduced risk of heart disease.
Did you know…studies show eating nuts may also reduce the risk of having a stroke or developing type 2 diabetes, dementia, macular degeneration and gallstones.
Did you know… frequent nut consumption is associated with reduced risk of weight gain.  People who ate nuts more than 2 times each week were 31% less likely to gain weight than those who did not.
Did you know…that the fats in nuts are “good fats,” (especially In the raw nuts we use).  Walnuts in particular are full of “omega 3s.” Studies show they may help to:

  • Raise HDL (good) cholesterol and lower LDL (bad) cholesterol
  • Lower blood pressure
  • Reduce risk of blood clots
  • Promote improved brain function
  • Reduce inflammation throughout the entire body – asthma, arthritis, skin disorders, heart/blood vessels, etc. – reducing the risk of development of numerous diseases
  • Improve moods
  • Reduce depression and behavioral disorders

Nuts are full of many other nutrients including:

  • Very high antioxidant content—pecans and walnuts rank in the plant-foods category with the highest amount of antioxidants
  • Vitamins (B’s & E ), minerals (magnesium, manganese, iron, zinc, copper, potassium) and fiber
  • Melatonin—helps regulate sleep cycles and acts as a potent antioxidant preventing cancer and heart disease

Oils – How can coconut oil be good for me?

Coconut oil has been called “the healthiest oil on earth” because of its wide range of health benefits and healing properties. Its unique, smaller molecular structure makes its more easily utilized by the body. Science is now confirming the benefits and effectiveness of the traditional, non-Western cultural uses of coconut oil, which may help your body to:

  • Strenghen the immune system
  • Kill bacteria and viruses
  • Support thyroid function
  • Increase metabolism
  • Reduce body weight
  • Lower “bad cholesterol” and raise “good cholesterol”
  • Normalize blood sugars
  • Improve insulin sensitivity

Fats—Your desserts sound very rich.  How am I really going to feel after I eat them?

Because we use unprocessed, plant-based ingredients without added chemicals, preservatives or fillers, they are much easier to digest and do not “sit” as heavy as traditional, dairy- and sugar-filled sweets.  You will be surprised by how good you feel afterwards.  Also, you’ll find that with whole-foods, you can be totally satisfied with smaller portions!

Fat and oils – I’m confused.  What you’re telling me is so different from my traditional warnings about hi-fat foods i.e. nuts and coconut oil.  Do you have any research to back up your statements?

Sweeteners – What do you mean by “natural sweeteners?”

We choose sweeteners in their most unrefined and unprocessed form including:  raw honey, stevia, agave nectar, even dried fruit (raisins and dates).  We do not use any sugar substitutes!

Glycemic Index – What is the meaning of “low glycemic?”

The Glycemic Index is a measure of how carbohydrates affect blood sugar levels. “High glycemic” means the “carbs” breakdown quickly and raise blood sugar levels rapidly.  “Low Glycemic” means they digest more slowly and blood sugars rise more gradually.  This concept is becoming increasingly more important to minimize blood sugar and insulin level spikes for overall health and weight management.

Honey – How is raw honey different from other honey?

Raw, unprocessed honey typically has a very thick, opaque and creamy consistency that preserves the  live enzymes, numerous phytonutrients, vitamins and minerals.  Studies using modern science are now validating the traditional uses of honey for medicinal purposes, showing that the components of honey can provide the following benefits:

  • Providing anti-bacterial, anti-viral, anti-fungal properties (skin, stomach, wounds, teeth & gums, etc.)
  • Strengthening the immune system
  • Helping to relieve and reduce side effects from cancer treatments
  • Healing wounds, ulcers and burns
  • Raising antioxidant levels to aid in healing and to slow aging
  • Improving digestive health
  • Stabilizing and maintaining blood sugars
  • Suppressing coughs
  • Giving great energy, especially for athletes

Sweeteners – What is agave nectar?

It’s a pure, unrefined sweetener made from the juice of the Blue Agave plant. It’s a bit thinner than honey, sweeter and considered “low glycemic.”  It’s been used for over 5000 years as a sweetener.

Sugar Substitutes – Why should I give up my zero-calorie Splenda for your “natural sweeteners” with their higher calorie count?

We do not use sugar substitutes because of their chemical composition and thus their by-products and associated risks within the body.  Splenda, for example, is a sugar molecule with chlorine added.  A number of very undesirable side effects (migraines, rashes, numbness, dizziness, aggitation  ) have been linked with this low-calorie sugar substitute.  Many of the components of artificial sweeteners are known hazards, but because of individual bodychemistry, the degree of side effects can vary greatly.

Sugar – Why don’t you use sugar?

Sugar adversely affects the body in numerous ways…and it’s documented!  Here are just a few ways:

  • Suppresses the immune system
  • Feeds cancer cells
  • Is an addictive substance
  • Depletes mineral levels (affecting bone health
  • Disrupts blood sugar and insulin levels (leading to diabetes)
  • Can cause hyperactivity, anxiety, and inability to concentrate
  • Compromises GI health
  • Leads to hormonal imbalances
  • Contributes to obesity

Diabetes – Are the desserts OK for diabetics?

Because we use natural sweeteners, they are much more diabetic friendly than those desserts with processed sugars, allowing ours to be a good choice for diabetics.  The fat, protein and fiber content also slow the rise in glucose levels, while many of the natural sweeteners may actually help to regulate blood sugar levels.  It is still important to use moderation and be sure to be re-nourishing your body with plenty of fruits and vegetables, good proteins and fats, as well as implementing healthy lifestyle changes, including exercise.

Sweeteners – Are there any restrictions for my infant tasting or eating any of your treats?

Desserts with honey should be avoided.  Honey is not recommended for infants under 12 months, as it may cause botulism. Be sure to check the ingredients!

Chocolate – I thought chocolate wasn’t good for us.  How can it be recommended for health?

Most chocolate used in desserts also contains dairy and refined sugar.  We use only pure forms of chocolate without dairy or processed sugars.  Recent research shows that dark chocolate has very important health benefits. Cocoa is very rich in polyphenols, or “phytonutrients,” which may help to:

  • Improve blood flow, keeping vessels healthy and “elastic”
  • Keep the blood from becoming “too sticky”
  • Raise HDL (good cholesterol) and lower LDL (bad cholesterol)
  • Lower blood pressure
  • Improve insulin sensitivity
  • Reduce inflammation
  • Slow the aging process

Cocao Nibs – What are “nibs”?

Cocoa or cacao nibs are just the unprocessed, natural cocoa bean.  They are full of flavor, nutrition and even fiber, so again, you can get nutrition and health benefits in your dessert.

Gluten-Free – What are your products made from?

Our desserts are made from all wheat-free ingredients, using a combination of nuts and fruit instead.  This eliminates the starch-based substitutes of most gluten-free products, while adding fiber and “good fats.”  The commonly used gluten-free flours are very  high in carbohydrates and very low in fiber, which can often compound and complicate digestive and even blood sugar issues.  Our desserts are however, manufactured in a plant that does use wheat, dairy, eggs and nuts.  If you are extremely sensitive or intolerant, you may want to wait until we are certified gluten free.

Dairy Free—How can you make cheesecake and other “creamy” desserts without dairy?

We’ve found a blend of nut-based ingredients that gives our desserts an amazing, creamy, dairy-like consistancy.  You’ll never miss it!  It’s perfect for dairy and lactose-sensitive individuals.  Plus, you get all the healthy, whole-food ingredient benefits.

Soy – Why don’t you use soy in any of your desserts?

We’ve chosen to avoid it in our desserts primarily because of its associated allergies, estrogenic affects, and the fact that soy is so controversial.

Raw – What do you mean by “raw” desserts?  Aren’t uncooked, unheated food combinations considered unsafe or at high risk for bacteria?

Raw simply means we use ingredients that are in the most natural state possible.  Our desserts are not baked or cooked.  They are perfectly safe and actually even more beneficial than cooked desserts, since the enzyme, vitamin, and mineral content remains intact and at their highest value.  Without using the heat that destroys these valuable essentials, we retain the highest levels of nutrients possible, so you get all of the yum and health benefits in your dessert.  This way, dessert really can be good for you.

Taste– I have been so disappointed in the past with the taste of anything labeled “healthy”.  How can hope or believe that yours tastes any better?

One of our primary goals  is to offer healthy and “incredibly delicious” alternatives.   We place the highest emphasis on the flavor of our products with the commitment to “re-define the taste and image of healthy!”

Cost – Why are your prices so high?

Quality nuts, dried fruit, healthy sweeteners and other nutrient dense, whole-food ingredients are more costly than lower-quality, processed foods.  It’s important to remember that we’ll pay for our health at some time. It’s always better to maintain your health than to try to regain it.

Shelf-Life – How well do your products keep since they do not have any preservatives?

All of our desserts are frozen immediately following preparation, and are kept that way until you receive them, without product loss, drying or diminished nutrient value.   You have the advantage of purchasing your desserts prior to your events, making them available at any time, as well as storing any extra portions, maintaining that “just-as-good-as-first-made” taste.

Packaging – How on earth can you mail me a cheesecake and have it arrive in one piece?

Cheesecakes are made and frozen solid in an attractive, disposable pan.  We shrink-wrap, vacuum-seal, and securely pack them for shipment in a specially insulated box.  We coordinate the best shipping time and rates for your event and use frozen ice packs or dry ice to assure arrival in optimal condition.

Shipping – How does my pie come?  Won’t it get “soggy” or “scrambled” on the way?

Our pies and parfaits come frozen, uniquely packaged and stacked as a “tower.”  Each of the three layers (filling, crumb topping and crème) comes in its own container to maintain freshness.  This way, you have the flexibility to store and serve them as creatively as you like, whether it be as a pie, cobbler or parfait.

Fixed Shipping Rates – Why can’t there be a standard shipping rate chart to select with my order?

We work with a number of variables (temperature, distance, order size, schedules) and customize the order for you, so shipping will be most economical.  This means rates on each order will be a bit different for your benefit.

Ordering—How far in advance do I need to place my order?

Because the desserts are frozen, our goal is to have everything in stock.  This also means you can pick-up or have your desserts shipped in advance, to minimize last minute stressful details, and still have the freshest desserts possible.
If you are preparing for a large party or event, please allow us extra time to be sure to fill  your special order.
